Banana Cookie Shots

My friend posted on Facebook a while back with the simplest cookie recipe I’d ever seen in my life.  I have been wanting chocolate ALL. THE. TIME. lately and so I sent her a text asking for the recipe again.  I decided it’d be a perfect way to start my blog up and going again.  🙂  My wonderful friend found these cookies via The Burlap Bag.

These “cookie shots” are great for snacking, healthy, adjustable to what you and your family like, and yummy!

1 cup Quick Oats
2 Ripe bananas
1/2 cup chocolate chips (or other add ins you’d like)

Super easy.  Peel the banana’s and throw them into a bowl with the oats. I used my stand mixer and it just mushed the bananas up for me and mixed it all together.  You could easily do the banana mushing before then mix with a spoon, or beaters.  Add chocolate chips and mix them in.

Next I used my cookie scoop (no idea what size it is … maybe about a tablespoon) and scooped the cookies onto a GREASED cookie sheet.

These cookies do not change in size … at all.  So I took a fork, and flattened them down so that they’d be more round like a cookie, instead of a ball like the scoop.

Bake on 350 degrees for 15 minutes, cool, and enjoy!

I’ll admit, I was excited but apprehensive to try these.  I wasn’t sure what they’d be like.  They are chewy and the consistency is slightly different than a normal cookie.  However, they’re great.  I don’t feel nearly as bad grabbing one when I walk by them, lol.

    Just an FYI… Quaker Oats (or any of the generic brands of quaker) are not gluten free. However, it is VERY easy to get your hands on gluten free oats, so this recipe is still PERFECT!! Looks so yummy. Thanks for sharing.
