Chocolate Pudding Cookie Pie

Happy Pi day!!  Did you know it was Pi day?  Well, it is.  If you don’t know what Pi is click here.  Pi is 3.14 and since it’s March 14th … it’s Pi day.  What would we do to celebrate Pi Day but eat PIE!  Right??

Well, if you didn’t know it was a day to celebrate and have an excuse to eat Pie but think that’d be fun, then I have a great solution for you!!  I whipped this pie up this morning (well, the crust last night, but it’s totally doable to do in the same time you’re doing the pie).

Are you ready to make this delicious, easy pie to surprise your family for dessert tonight?

Chocolate Cookie Pudding Pie

For Crust 

(if you’re making from scratch, you could of course just buy a pre-made one)
4 whole Graham Crackers (1 1/2 cups crushed)
1/3 cup melted Butter
3 TBSP Sugar

For Pudding Pie
1 large package Chocolate Pudding
2 1/2 cups cold Milk
12 Graham Cracker Chocolate Cookies chopped
4 Graham Cracker Chocolate Cookies smashed
Whip Cream (optional)


Alright, first you’ll want to make your crust. 

*Preheat oven to 350 degrees.

*Smash the graham crackers in a food processor, or in a Ziplock type bag using a rolling pin or meat mallet (at least that’s what we use here, lol).  Once the graham crackers are all smashed, add the sugar and the butter.  Mix together, and press into pie pan (I sprayed mine).  
*Now you’ll put the crust into the preheated oven for 10 minutes.
*Let the crust cool to room temperature.
Once crust is cool, start making your pudding.
*Pour 3 cups cold milk into large measuring liquid cup, or bowl (I used a 4 cup liquid measure).
*Add pudding mix until smooth.
*Add chopped up cookies. Stir until incorporated.
Stir cookies into pudding.
* Pour pudding into cooled crust.
*Put pie in the fridge for 1 hour (or longer, but least 1 hour so it can set properly).
*After an hour, sprinkle the crushed cookie crumbs onto the top of the tip.
*Add whipped cream if you’d like.
