Yummy Granola

I had a totally different plan for my post today.  It’s been a lazy, last day of spring break, kind of morning.  My oldest has been begging me to make granola lately, and I decided today was the day.  I have a great recipe that we love from my friend Andrea, and decided it’d be perfect to share!  I’ve modified it slightly.

This recipe is super easy, delicious and doesn’t take too long (all things considered).  The other thing, there are VERY basic things in this recipe (things I always have around).  Obviously you can add so many awesome things to it.  My kids are picky and boring … so we leave our pretty plain.  We love, love, love it with yogurt though!!

Yummy Granola
Yields approximately: 7 cups

6 Cups Oats (not quick, get the old fashioned kind)
3/4 Cup Unpacked brown sugar
2 Tbsp Cinnamon
1 tsp. Salt
2 Tbsp  Ground Flax Seed (optional)
3/4 Cup honey
5 Tbsp Butter

*Preheat over to 300 degrees
*Stir and combine the oats, cinnamon, and brown sugar.  
*Melt honey and butter in a microwave safe bowl.
*Pour melted mixture over dry ingredients
*Spray 2 cookie sheets with cooking spray.
*Spread granola out over sheets.
*Bake for 30 minutes — stirring every 10 minutes.
*Let cool on the cookie sheet.
*Once cool, break into small pieces.
*One recipe makes 2 gallon size bags.

Serve with: dried fruit, yogurt, fresh fruit, ice cream

    I just made some homemade granola yesterday 🙂 Mine was a bit different (no sugar, but sweetened with honey and applesauce) and used oats, barley, millet and flaxseeds 🙂 Super tasty over some greek yogurt!
