I got the recipe for these cake mix peanut butter cup cookies when I was in college from a friend. I love the idea of making a quick cookie without a huge hassle. These are easy, and fun to let the kids help with. It’s pretty much just a dump in cake, and everyone can work together to unwrap the peanut butter cups, and then help clean up the mess. 🙂
Once you’ve got the consistancy right, drop by the tablespoon onto a cookie sheet. They don’t really spread out at all, so you can fit a lot more on there. I fit 20 on a cookie sheet at one time.
While cookies are baking, unwrap at least as many peanut butter cups as you’ll need for the pan of cookies in the oven. However, you can just try to get them all done.
If you want your peanut butter cups a bit melty (like we love them) stick them on right away, upside down (they just taste better and stay on better that way). Wait a few minutes, and they will get all nice and melted. I wouldn’t wait longer than 3-5 minutes to put them on. You don’t want the cookie to harden up too much or the peanut butter cup won’t smoosh down well enough.
