I went to Walmart by myself the other day (I know, I was just as shocked as you are now that I didn’t have any of my 6 kids with me!  My husband is a rock star like that though), and met these adorable ladies!  They were passing out Blue Bunny vanilla ice cream with peaches.  Hello yummy!  I stopped and chatted for a moment (because, again, I was there alone and so I could) and they really were super nice.  Not to mention the ice cream was amazing!  Good company, good food.

I grabbed some chocolate and vanilla.  If you’ve been around my blog you know my family is totally split about vanilla and chocolate, so I wanted options for everyone.

I headed home with some ice cream, mini ice cream cones (also from Blue Bunny) and some strawberries and peaches.Ice-Cream-Cone-Parfait-Recipe by Simplistically Sassy

During the summer when I have all six kids at home, I love to include the kids whenever I can, especially when it comes to making fun treats!  My oldest was up for holding my phone while we did a time-lapse video of how to make these ice cream cone parfaits.  

These turned our super, super yummy.  I preferred the chocolate and strawberry.  I used the chocolate mini cones, chocolate ice cream and strawberries.  Amazing!  Ice Cream Cone Parfait by Simplistically Sassy

The peaches and cream also turned out great.  I used the vanilla mini cones, vanilla ice cream, and fresh peaches.  I loved the slight added chocolate from the mini cone, but even without that, it would have been wonderful!

These are going to be a new family favorite. I love how simple they are that even some of my older kids could do these by themselves, or come up with new combos!

Ingredients
  1. 1 Blue Bunny Mini Ice Cream Cone
  2. 1/4 Peach or 3 Strawberries
  3. 1 cup Blue Bunny Ice Cream
Instructions
  1. Chop up the mini ice cream cone.
  2. Chop up the fruit.
  3. Layer the cone, fruit, and ice cream as desired.

Oreo Cookie Balls for Game Day

Being a stay at home mom is awesome.  Sometimes, being able to throw a party gets me out of the rut that I get in though.  I love having other kids over, or friends, or other families over.  It just breaks up the every day to day stuff, and gives me the opportunity to let my love of being social come out.  

I think game day is one of the best excuses to throw a party.  I love it.  The other day we had so much fun with our friends.  We all got got together, chatted, ate some tacos, watched the game, and enjoyed a fabulous recipe from OREO that I’m going to share with you.  Of course, as you’d expect, I did all of this on a budget without breaking the bank.  

I decided I wanted to do something quick and easy for dinner, so we set up a taco bar.  It was perfect.  Our friends have older kids, and they were able to pick their toppings and such.  Our kids are crazy picky, and I think they ate chips, and strawberries, lol.Taco Bar by Simplistically Sassy

I wanted to make a variety of flavors for the OREO Cookie Balls, and so I found this fun OREO display at Walmart that had so many kinds of OREOs.  I had my 3 youngest kids with me, and they helped pick out what we got.  We picked regular OREOs, Golden OREOs, Birthday Cake OREOs, and Mint OREOs.  Walmart Oreo Cookie Balls

It was fun to put these OREO Cookie Balls together.  I decided it’d be fun to do a time laps video on my phone while I made them.  You can see how life really is with kids … they were distracted, then found me, needed to help.  Then distracted, then crackers appear, then they’re helping, then they’re gone, then we’re done, lol.  It’s funny.

Making the OREO cookie balls is super simple.  You just crush the cookies, then mix with cream cheese, shape and then let them freeze for about 10 minutes, and then dip in chocolate. Oreo Cookie Balls Chocolate by Simplistically Sassy

I wanted to have some fun with the OREO Cookie Balls for the game day party we were throwing.  So, I shaped some into footballs, and some into flatter balls and put X and O on them to make the Game Play Book.  In the footballs, I also added a fun little surprise INSIDE in the middle.  I cut up small candy bars and wrapped the cookie ball around it.  It was super yummy, and no one was expecting to have something in the middle.Oreo Cookie Balls Footballs by Simplistically Sassy

I also tried to make football helmets … but they didn’t turn out too well, lol.  So they’re just balls and I stuck some football toothpicks that I found at Walmart in them.  Sometimes things aren’t perfect, but they can still be used and no one will really care.  😉Oreo Cookie Balls by Simplistically Sassy

I grabbed some white and black plastic table clothes while I was at Walmart as well and cut them into stripes and then used a large yarn needle and some twine and just threaded together the stripes.  It reminded me of a referee uniform.  It was a quick and easy (and inexpensive) backdrop.  Oreo Cookie Balls table by Simplistically Sassy The kids loved the OREO cookie balls!Oreo Cookie Balls by Simplistically Sassy

I found these props for a Photo Booth and thought everyone (of all ages) could enjoy this.  The backdrop is actually just a paper table cloth.  I just hung it up and had a bowl with all the props.  It was quick and easy , and again, perfect for a tight budget.  🙂Football Photo Booth by Simplistically Sassy

Easy and delicious Oreo Cookie Balls.

Ingredients
  1. 1 pkg (8 oz.) brick cream cheese, softened
  2. 36 OREO Cookies, finely crushed (about 3 cups)
  3. 4 pkg. (4 oz. each) semi-sweet baking chocolate, melted
Optional
  1. White chocolate, melted
  2. Small candies to go in the middle
Instructions
  1. MIX cream cheese and cookie crumbs until blended.
  2. SHAPE into 48 (1-inch) balls. Freeze 10 min. Dip balls in melted chocolate; place in single layer in shallow waxed paper-lined pan.
  3. CUSTOMIZE it with your own ingredient additions or decorative skills.
  4. REFRIGERATE 1 hour or until firm.
  5. 1 hour or until firm.
  6. Share and enjoy!

The Perfect S’more Bar

S'More Bar by Simplistically Sassy  Spring break was approaching.  I wanted to find something super fun to do that week, well, several things. I wanted our family to spend time together, doing fun things, and making fun memories.   Last summer we ended up buying a little fire pit.  I love a good fire, roasting hot dogs, roasting mallows, making s’mores, ya know, all that fun stuff.  I decided we were going to have a grand time the Friday night of spring break.   Well, there was a slight problem with it all.  My husband doesn’t really love chocolate, neither does my 3 year old for that matter.  In fact, both prefer graham crackers with only mallows.  If they do have chocolate with them, they’d rather have which chocolate.  This is when I came up with the idea of doing the perfect s’more birth control bar.   S'More Bar by Simplistically Sassy I grabbed some regular chocolate bars, a peanut butter cup bar (perfect you guys!  Seriously, it’s a PB cup, but in a form of a bar instead of a cup, so it’s a perfect fit for a s’more bar.  I also grabbed a cookies n’ cream bar to mix things up for my husband and have something that he and my 3 year old would, hopefully, love.  S'More Bar by Simplistically Sassy As for the marshmallows, I had to go with some big classics.  Those are always perfect plain, and in a s’more.  Peeps were in season, and a MUST try for a s’more bar.  Adds another element that was super fun and the kids were SO excited.  There were like 4 other marshmallow flavors, and I went with vanilla (ya know, since my family like that flavor).  Those were yummy too. You could get super creative in your s’more bar here though and get loads of various flavors. S'More Bar by Simplistically Sassy I snapped a picture of each of my kids eating their s’mores.  Or in my daughters case, just before she crunched right in.  I love the various faces of the kids.  They all had a blast with picking their favorites from the s’more bar, and it’s something we will totally do again for a fun family treat.

Easter egg Rice Krispie Treats by Simplistically Sassy

The other day at the grocery store my kids made sure to bring it to my attention that the Cadbury Mini Eggs were on sale.  I actually didn’t end up buying them … until a few days later when I had an idea of what I was going to do with them (besides shoving them in my face).  

It was while I was looking at Pinterest, with all it’s pretty Easter Egg Rice Krispie treats that I realized what I needed to make.  I needed to add the Mini eggs to the Easter Egg Rice Krispie treats … it was perfect, a match made in heaven, and oh so simple!  It’s a must try recipe.

Rice Krispie Treat Eggs with Mini Cadbury Eggs

Easy Krispie treats, with a delightful chocolate treat shaped into eggs.

Ingredients
  1. 2-3 Tbsp Butter
  2. 4 cups mini marshmallows
  3. 6 cups Rice Krispie cereal
  4. 1 bag Cadbury Mini Eggs
Instructions
  1. Measure cereal, and dump into a large bowl.
  2. Melt the butter and marshmallows over medium heat stove top.
  3. Once butter and marshmallows are melted, pour over cereal, and mix until all cereal is covered with the marshmallows.
  4. Pour bag of Cadbury Mini Eggs into the mix well.
  5. Flatten in a 9x13 pan until even.
  6. Let cool for about 5 minutes.
  7. Cut into sections, and form each section into an egg shape.
Notes
  1. You could always chop up the Mini Eggs to make them smaller bits.

Butter Apple Pie Crust Bites

For a Christmas party with friends, and as part of a sponsored post for Collective Bias® I made these easy Butter Apple Pie Crust Bites using Land O’ Lakes Butter to serve as an easy, yummy dessert.

I recently ventured out into the crazy world of Walmart with all my kids and my husband in tow (I have recently decided that I can’t just do me and the 6 kids anywhere unless it is an emergency trip to the store).  In our venture, we found an awesome deal on Land O’ Lakes butter.  I was so excited because we were going to be making an amazing new butter apple pie crust recipe for a little get together with some friends.  I love finding a great butter, and at a great price.  Seems rare for me lately.Butter Apple Pie Bites #shop

After gathering whatever else was on our list, we were off to make some amazing butter apple pie crust..  This is so easy, and I’m SO excited to share it. It’s seriously THE. BEST. CRUST. EVER!!!

All you’ll need for the crust is some great butter (like Land O’ Lakes), flour, and COLD water.  To make some awesome apple pie filling to go along with these, you’ll just need some apples, sugar and cinnamon.  Easy as pie!  😉  Ha ha ha!Butter Apple Pie Bites #shop

You’ll measure out your flour, and salt, and mix those together.  Next, add your butter.  I learned this trick from foodie blogger friends … grab your cheese grater, and grate your butter and then you’ll use your pastry blender/knives to get it all blended.  EASY!  Love easy things!Butter Apple Pie Bites #shop

Blend up the flour mixture and butter until if looks like this.  You’ll have little balls.

Then you’ll add your cold water.  I used a fork for this part.  It takes a little bit of work, but it’s not too bad.  You’ll have a ball that looks something like this.  Shouldn’t be too sticky, but you don’t want it falling apart either. You’ll need to let your dough rest for 15 minutes.

You could go take a quick nap while the dough rests.  Or you could make the filling.  Whatever you’re up for.  I just got an apple corer, and I’m in LOVE!!  Seriously, why didn’t know how magical these were.  Okay, so I cored the apples, easy peasy.

Then I peeled them.  I sliced them up next.  For my Butter Apple Pie Bites, I wanted little apples.  If you’re doing a pie, then you could do thing slices.

Once all your apples are cut to your liking, mix your cinnamon and sugar together, and then pour over the apples.

You can know let your filling rest while you finish up the dough. Spread some flour on the counter, and then roll that dough out.  We decided to do Christmas trees for our little party.  We like to be festive like that.  I had a little helper that figured out I was cooking.  Perfect helping job.  he loved it.

Next, you just put your cookies onto a cookie sheet (sprayed), and then you’ll want to take some more butter (I used about 3 TBSP of the Land O’ Lakes butter), and melt it and brush it on.  Then you can take some cinnamon and sugar and sprinkle it on the top.  I’d even recommend flipping them over, and butting the other side and sprinkling the other side as well.  Then pop them in the oven for a few minutes.

While your cookies bake, you can grab your pie filling mix, and put it in a sauce pan over medium/high heat, and bring it to a simmer.  Let it simmer for about 12-15 minutes.  Stir occasionally.  This will soften those apples up like when you’d normally cook them in a pie.

Once the cookies are done, you can just spoon on the filling, and enjoy your butter apple pie crust bite, a fun new twist to a regular apple pie.

You can also make a pie with this awesome crust. This pie obviously didn’t last long enough to even get a picture of the entire thing, lol.

You can just do a crumb topped pie.  That’s super easy as well.  You’ll have left over crust, so you could do a crumb pie, and the butter apple pie crust bites.

Apple Pie Crust Bites
Serves 10
These butter apple pie crust bites are delicious and a crowd pleaser at any party.

Butter Crust
  1. 2 cups flour
  2. 1/2 tsp salt
  3. 1 cup butter (2 sticks)
  4. 2/3 cup COLD water
Apple Pie Topping
  1. 4-5 medium apples
  2. 1/2 cup sugar
  3. 3/4 tsp. cinnamon
  4. 2 Tbsp lemon juice
Butter Crust
  1. In a bowl, mix your flour and salt.
  2. Once those are blended, grate your butter into your flour mixture (or cut butter into small cubes), and blend until small beads of butter form, and it's crumbly.
  3. Add cold water and mix with a fork until it all comes together.
  4. Let rest for 15 minutes.
Apple Pie Topping
  1. Core, peel, and cut apples into bite size pieces.
  2. In another bowl, mix the sugar and the cinnamon together.
  3. Pour lemon juice over apples, mix.
  4. Pour sugar mixture over apples.
  5. Mix until apples are covered.
  6. Heat oven to 425 degrees.
  7. Spray a baking sheet, set aside.
  8. Roll crust out on flour covered counter until about 1/4 inch thick. Use a cookie cutter to create shapes for the crust. Place cut out crust on baking sheet.
  9. Bake for 12-16 minutes depending on your oven.
  10. While crust bakes, put apple mixture in a sauce pan on medium/high heat.
  11. Bring to a low boil. Let simmer for 15 minutes, or until apples are soften to your liking.
  12. Top crust bites, with apple pie topping, and whipping cream or serve with ice cream.

Peppermint Kissed Christmas Popcorn

Christmas Popcorn   Are you ready for these amazing and easy peppermint kissed Christmas popcorn? They are SO easy you guys.  Only 3 ingredients are needed.  It’s true!  Of course, you can add (or subtract … if you really wanted to for some reason). Let’s dive right in.

What you’ll need:
Popcorn – I used just under 10 cups and it worked great.
1 package Candy Cane Hersey Kisses
1 cup M&M’s – I used the Christmas ones.

First of all, make sure you don’t have unpopped kernels in your popcorn.  That’s no fun to bite into when you’re not expecting it. Next you’ll want to unwrap all those kisses (it really doesn’t take as long as it sounds like it does), and put them in a microwave safe bowl.  Put them in for 30 seconds, stir, and repeat.  After that, mine were melted enough after stirring them a second time, that it was fine.  You don’t want to over melt them or they could go all weird on you.

Pour the kisses over the popcorn and stir until all the popcorn is covered. Add in the M&M’s and stir really well.  You can add more if you’d like.

Lay wax paper on a cookie asthma sheet, and you can either spread it all onto the cookie sheet, or use a 1/4 cup measure, and dish that out onto a cookie sheet covered in wax paper.

Put that in the fridge for at least 30 minutes to harden up the chocolate. Break up into chunks if you just spread it all onto to the cookie sheet.  If you did the balls it’s the perfect size to put in little baggies and tie with a cute ribbon, and tag to give to a friend.  🙂  It’s also the perfect size to just pop in your mouth and savor the awesome Christmas popcorn balls taste that is super yummy.  🙂

Alternatives: Omit M&M’s for some other candy you love. Use peppermint M&M’s instead. Use Oreo’s instead. Add candy canes for more peppermint flavor.
